Friday nights are a great night to do one because the Hilton Hawaiian Island Village has fireworks every Friday night, and they will be included in your sunset cruise.
We were lucky enough to be in Oahu over the 4th of July so we chose that night for our cruise. We cruised on the Atlantis Cruises Majestic ship. The Majestic is three deck ship. The two bottom decks are inside and have large panoramic windows for optimal viewing.
The top deck is open, but covered giving you the chance to enjoy the weather and wind in your hair. Dinner and non-alcoholic beverages are usually included with the tickets along with the option to purchase beer, wine and cocktails.
